    We realised the wines we liked were the wines our customers also liked. Soon the tick box approach (to wine lists) was obsolete for us. Instead of Sancerre, we were selling a mineral Martinborough Sauvignon or a boutique winery Chardonnay from the Mornington, instead of Chablis’.
